Pan-Fried Potato Fritters

(Schupfnudeln)

Ingredients:

1 lb boiled potatoes
1 lb all-purpose flour
1 egg
nutmeg
salt
flour
7 ounces butter

Preparation:

Combine mashed potatoes, flour and egg. Add a little nutmeg and salt. Mix to a firm paste and form into shapes the size of a finger. Roll potato fingers in flour and fry in butter until golden in color. Drain on kitchen paper and serve.
